Culinary Chef is now the better choice. I'm a former recording engineer. The work itself is great! But too many inflated egos in the music business, and too many insecure artists/overly secure artists and power-tripping producers made the work environment too high stress. Also modern and ever-improving computer software, is also helping to make this career obsolete. Now almost anybody with a bit of knowledge, a quiet room, a computer, and the right software, can turn out a decent recording. While being a chef and working in the fast-paced environment of a restaurant kitchen can get stressful as well... Cooking is a creative process that will always be in demand, and not likely to ever be completely replaced by a machine.

I've never been a recording engineer, but I have worked as a chef. The funny thing about food is that you encounter all different aspects of people, whether you are behind the scenes or the "face person". I had to get out of working in kitchens after doing it for 7-8 years, due to frustration, burn-out, and the realization that I really don't like playing with others and always having to answer to someone else, even if they don't have a clue about what they are talking about. For example, most people hold the notion that the customer is ALWAYS right. Not true. You would be surprised the number of people who think they know the difference between a rare, medium rare, and medium steak. And since the customer is ultimately the one whose approval you must get, be ready to deal with people who think they know what they are talking about, just because they saw it on the Food Network, or Martha Stewart, or Rachael Ray. I swear that "foodies" are the hardest customers to deal with. As for job security, there is none as a chef. Unless you land a gig as the Head Chef at some place, people that can cook are a dime a dozen. Yes, you could probably always find a job, but they are not always going to be places that you actually want to work. Also, as someone just starting out in the biz, you have to be prepared for starting way down on the bottom, and working your way up. Probably obvious, but some people have the perception that because they went to some school somewhere that it means they can jump ahead in the line. Sometimes that is true, but mostly you gotta work your way up. Also, I would suggest learning Spanish. More and more, you will end up working with someone in the kitchen who is Mexican and speaks just rudimentary English. As the price of food goes up, more places are hiring cheaper kitchen help. So why pay $11-15/hour to some culinary school graduate, when you can hire someone willing to work for half that, who just might have the same experience level. Despite what I've said, though, cooking can be a lot of fun. You can meet a lot of different people from all over the world. You also have the chance to do a lot of traveling as a cook/chef. I hope my honesty helps. Now you just need a recording engineers side of the story.
