What can I do with a Bachelors in Nursing that is not bedside nursing or on a nursing unit?

Maybe if you can get more experience you can try to ease into a quality assurance position or a case management position. Some clinical educators only work 8-5. Many management positions are 9-5 but you need a MSN now a days. Some NP positions are 9-5 but they usually take on call for their office's rotation but those require a MSN if not more. In all honesty, I can't think of that many business-related positions. Maybe if you're lucky you could become a rep. I know one rep who had a masters in social work.

Most places that operate M to F hours will most likely look for experienced nurses that has years of nursing. Many outpatient clinics - when they hire an expensive RN, they will want to make sure this person can triage on the spot. That is something that is not taught at all at any nursing school (for other readers who may be interesting in nursing, nursing schools teaches ** bedside nursing ** only.) So one year is too short. If you were working in ER or ICU, you'd have more experienced with assessments, and that can speed it up more. Best wishes
