Some bigger night clubs will have an A/V staff or at least a few sound guys. Try applying there first. Even if you have to start wrapping cables at the end of the night, do it. As for studio recording, that's another portion. Try becoming an apprentice with an engineer and do grunt work. I would avoid going to schools. Also buy the Yamaha Sound Reinforcement book.
