    Many jobs in business and consulting - economics can be almost like a business major. For graduate-level work, Master's students can get jobs working for finance companies, consulting firms, the government, etc. PhD students can do the same, or find jobs in academia.

I have an English degree and I work for the government as an Information Technology Integrator. Really, it doesn't matter what your degree is in because the jobs you will find in the government are extremely widespread. You're going to find it funny that you know so much more than the people who have been working there for years. I think you're on the right path, you probably need to get some more applications in...I got lucky and was hired on my second one, but I know people who have sent in 200+ and still haven't found a job. Tough time to be entering the job market...good luck!
