    It's a kind of arable farming, which just means growing plants for food, as opposed to livestock farming and other types. It's also probably commercial farming (you sell the potatoes) rather than subsistence farming ( where you grow the potatoes to eat yourself). it could be organic farming (no insecticides, artificial fertilizers or genetically modified crops) or non-organic when you can use any of these things.
