  You already got all you need to compare the two...especially combined with excellent posts from other answerers....the point regarding markets is the most important of all. You need to check out the prices for Ostrich meat, and how they change over the years. Is it moving up or down? Is there increased demand appearing from somewhere? But even then, you won`t have something a good farmer has..and that`s experience. So what I can tell you is this...a lot of ostrich farms seem to have come and gone here in the UK. Their experience has seemed to me to be that it`s a very challenging business, with a low success rate. Ther`es one other thing you don`t mention..and that is the `land` or premises. The best place for sheep, for example, is on mountainous, thin soiled. damp mountain sides where little else makes a profit..and they can get into all the nooks and crannies. You woudn`t graze cattle there, or grow wheat, for example. So the most important steps are to firstly lood at what your facilities grow/produce best...then check out the market.
