How do you send a text message to your email?

Using MailChimp (or any email program) how can I best (and quickly) send someone an email in response to a text message?

• I'm looking for a way that people could send in a text with their email address and quickly receive a welcome email with information about my organization. I don't want to sign them up for a list (but would give them that option in the welcome email). MailChimp looks like it may have a couple integrations, but I am unfamiliar with them. (As an example) one solution is to have people text their emails to a Google Voice number, and then have someone fielding this number send out individual emails. But, that's convoluted and it would be far better if it was automated.
