    Altea 72 has given you several excellent suggestions. One thing that's common is smoked meats - especially speck. I always have canederli at the christmas market in Trento, but that's already on your list (knodel). I like the Torta Fregoletta too and a good vin brulè on a cold day. If you like fish, Blau forelle is an excellent choice - it's a poaches trout.
