What are some good resources to learn back end web design?

There are plenty of resources to learn HTML, CSS and Javascript/JQuery. There are also resources to learn specific languages (e.g. PHP), but where can I learn to tie it all together, to build functional web apps. Things like AJAX, XML, and SQL are confusing to me, and I've yet to find a decent source where I can learn it from the basics.
