The websites JW provided seem to be good, but you may have problems to book a carriage ride. Maybe you don`t know that, but in Germany Christmas Eve is the main holiday and almost everyone closes their business latest by noon, because the family celebrations start late afternoon. Even finding a place to dine out can become difficult. If I were in your shoes, I`d contact my hotel and ask them for help, maybe the concierge has some good ideas/connections. Otherwise it sounds like a great idea - wish my boyfriend would be that romantic.... Good luck!
