Yes you can, and if I'm not mistake (certain models have different outputs), you can connect three to one card (1x DVI, 1x VGA and 1x HDMI), at least on the reference designs. It's one of the perks of AMD, even the lower end cards can run Eyefinity. Just setup one monitor as an Extended Display, or setup up an Eyefinity group. It's all in AMD's Catalyst Control Center, so it wouldn't be a bad idea to go onto the website and download the version for your operating system/card. You won't be doing any major gaming, but it should handle everything else you can do on two displays.
