You really only need to convert videos if the player you will be using doesn't support them (and in that case you might want to keep a copy of the original for future conversions), or space is an issue and you need them smaller. Otherwise, it's best to leave them as they are. Better that than unnecessarily recompressing and losing quality - especially if you have to do it again later. If a video's format becomes obsolete later on, you can convert it at that time. It's one of the positives of digital media.

AVI is the most universally recognized. I'd use that. Second would be mp4 and third would be mkv.
