How do you make the beef stick together when making hamburgers?

    What type of meat are you using? If you are grinding your own, chuck is good to use, and if you want it to be REALLY sticky, you can put it through the grinder twice.. . . But the most important part is that you need a bit of fat in there for it to stick together, cook well, and be really yummy! :) It sounds bad, but for hamburgers, honestly you don't want the most lean cut of meat. . . . Get 80-20, or 85-15. No higher.

This may sound strange, but mix your meat with whatever flavorings, chopped onions, etc. you usually do and then start mixing it together with your hands for a few minutes. Keep mixing even after it is blended well. If you do this instead of just pressing out the patties, the meat will stick together. Try part of it that way and the other part your way and compare!

Firstly, make sure you use good quality mince....some fresh breadcrumbs in your mixture will help to bind the meat together...need to adjust seasoning.

Press it together. I you have low fat meat, it does'nt stick together as well when cooking.

If you add half an egg to 16oz of meat and then shape them into balls....take the balls and toss them from hand to hand to bash out any air..then shape them into patties and cook them...if you have time put the shaped burgers into the fridge to toughen up and then fry them, and finish off in the oven
