I know the people who run this and they will ensure you get the most out of your trip, they have done many local projects and are a well organised and well funded organisation linked with the Danish government. The camp is on the shore or Lake Tanganyika (in Zambia) close to Mpulungu and you will be with a group of similarly minded people.

Your best bet is to join an existing volunteer program that has experience in rural Africa and the resources to deal with anything unforeseen. There are very real dangers and difficulties that need to be overcome and as an individual with no previous experience of Africa you really need some expert advice - and help. If you search online you'll find programs in different parts of Africa dealing with different issues. Just check them out thoroughly, preferably get in touch with people who have previously volunteered there. I don't know if a single week is possible (I mainly know African wildlife groups and they prefer people to stay longer because of the training that's involved).
