Spiral Spirals contain lots of gas for forming new stars because all the galaxy's mass shares approximately the same angular momentum--along a flat plane orbiting in the same direction. So they will contain lots of bright young stars as well as old ones. Ellipticals result from merging spiral galaxies, and the gas clouds will typically all collide at once and be converted into stars in what are called a star burst regions. The large bright stars die relatively quickly leaving only old red stars. Since galaxy populations increase toward the center of galaxy clusters, they also merge more often.
