If I update an app on my Android device, will the update reserve more memory, or will it replace the installed app's memory on the device?

What said, with an exception, if you are updating an app that already came with your phone (for eg. Gmail), then it is downloaded into the data partition while the original app was in system partition, so yup doubling up of space.

It will replace the already installed app. It won't take up more space unless the actual size of the app increases in the update.
