    In Valencia, the ones you definitely need to go on are Tatsu and X. Do Tatsu right after the sun is setting and X at night. Incredible experiences. The line for X will be incredibly long but just get in line at least a half hour (I think, or whenever they close the lines because they will stop handing out line tickets) before the park closes and you should be fine. Tatsu is the lie-down roller coaster but the lines aren't as long as it is for X.

you didnt mention which six flags you were going to but if its Six Flags over Georgia then i would choose Goliath. Best coaster i've ever ridden.
