    Noise cancellation headphones won't cancell that level of noise, at most you'll get a 30 dB reduction and that's in the very best headphones on the market. Most of the sub $400 USD noise cancelling headphones don't work. You'd be far better off with either a good pair of Sennheisers such as the HD-280 pro, or similar models from AKG, Skullcandy etc which are full over the ear headphones. To get rid of almost all noise, the only solution is proper ear plugs which block all sounds and then a pair of full range cut off industrial hearing protection muffs over the top.

The Bose QC2 headphones are incredibly good (I have one and never fly without them) however they will only block out the constant frequency noise (like the airplane engine noise) effectively. The other noises like sharp blows or hammering, people talking lously etc. just get a little de-amplified. What you probably want for the noise you are experiencing is inner ear, noise isolating earphones like the ones from Shure or Etymotic. These are much cheaper than the QC2 (they run ~50-200 bucks) but the catch is that you have to push them all the way into your inner ear so rather difficult to put on (although they are comfortable once they are in).
