Are you running the air? The condenser will ice up and when you shut the car off, the heat from the engine will melt the ice. Ta-da water!

The only way an engine can lose water if there are no external leaks (pipes hoses etc) is if the head gasket is gone or there could be a small crack in the head and water is leaking into the cylinders. If it were leaking into the oil, your oil would turn milky in colour....my vehicle does the same thing, although small amounts of water are leaking into one cylinder, not enough to cause it to miss fire though! Best thing to do it have your water system pressure tested!

Do You have a leak?

Forward

Either your water pump, radiator cap, or a freeze plug is the only things left. I do not know how they connect to the heater core on a Volvo, but it just might b a leaky heater core/hose.
