As you age the body decreases the rate of making melanin which adds the color to hair. So technically hair is grey all along except the melanin color covers it up.

The follicle does the equivalent of turning itself off. Melanin is no longer produced, no colour in the hair any more! Simples. Dad's turned off years ago. We [women] tend to have ours working for a fair bit longer. No pun intended.
