How can I teach myself horticulture?

I'm interested in working with plant based closed life support systems and might plan on getting a job in that field. It seems like horticulture would be a good subject to focus on for that field. And second: if I do try going into a field involving horticulture (in the context of closed life support systems) how can I prove that I am well educated without a degree as evidence?
