Yes you can. Provided your motorcycle can haul the weight of two passengers and some luggage. You'll have to pack lean. Also, make sure your pillion agrees that there will be stretches where they will have to walk it up for safety of both of you. Rest it's a matter of the rider's strength to keep the motorcycle steady with the additional weight.

From what it seems, its not that a daunting task you make it sound like. Yes the roads are dangerous. Yes there might be broken or no roads at all. Yes you might end up in situations you don't want to be in. But isn't that the entire agenda of an adventure trip? Taking a pillion with you has both advantages and disadvantages. First, you get company. Good compnay. And in good company you tend to enjoy the moment more. You get to make more memories. And this is one trip you will never forget your entire life. Secondly, a friend in need is a friend indeed. You will have someone by your side in case of a breakdown or a puncture. You WILL have pictures of yourself and not just sceneries. Thirdly, if the expenses are shared between the both of you, the trip becomes more economical. With more cash to spare you are sure to have a great time. On the other hand, an additional pillion means a breach in your privacy; if you are that kind of a person. You may not have YOUR space all the time. Secondly, a pillion makes it more difficult to handle the bikes in such terrain. I said difficult and not impossible. You just need to be a little extra careful and a little extra vigil while on the road. Thirdly, If you are a motorcycle rider you may have to share the time on the bike with your pillion which means lesser riding time for you. Nevertheless, it can helpful as you can rest yourself for a while until your turn comes up next. Trust me, there is no fun in riding when you are tired and drained. Its only great when you are awake and full on energy that you enjoy the best of both worlds. Hope this answers your question.

Hi   I am just back from a long trip in motorcycle that includes journey from Delhi to Leh via Manali to Kargil then Srinagar then Ludhiyana to Delhi to Agra to Varanasi to Kolkata. Including all the off tours and the side quests that I did, this trip was a 5000 km of pure fun.   During my Delhi to Leh to Delhi stretch I had my younger brother as a Pillion.   There are only advantages of having a pillion. You have a company for the road. Some one to talk to, fight with, smile with and even vent out your frustration and anger or sharing a bottle of water. Trust me it makes life special. A pillion and that pillions luggage will make the motorcycle really heavy. I have a 500CC Desert Storm modified into a Carb version. Generally during the solo ride it is extremely stable and I can easily ride with without touching the handles at times. But with Pillion and its weight, the handle used to shake like a snake. You become extremely cautious and in turn become a better rider as with the hardship you will also enhance in your riding skill. The hardship in riding is also fun and should be taken in a positive spirit. In my case I was the only one who rode the motorcycle as my brother dosnt know how to ride a motorcycle yet. Yet he came in handy in many places specially when I had to park my bike and go get something or negotiate in a hotel or even have to pull it back manually uphill (situational) Photographs. Man you will end up with photographs for your own. And you will hate them and shout on your pillion during that time only to smile later The trip needs you to take care of yourself, and a pillion often would be handy to remind you many such instances like putting on a sun screen or a lip guard etc. Roads are pretty good now in 2015 than what I have seen in 2010. I had a small fall in near Sarchu for being a gung ho and not taking precaution while crossing the stream with my brother as pillion. After that only in 2-3 instances I had to ask him to get down a walk a few distance. Well to end it, with pillion its more fun and at the end you come out as a better rider than you were before you made the trip Hope this helps.

I did it with a pillion, and 3 bags on a 100 cc bike. If bikes condition is good, then i dont see a reason why you should not. If the bike is 100-150 CC, then there will be instances when the pillion will need to walk for 100-200 meters for about 30-40 times during the entire route, and 4-5 instances when you will have to get down and pull the bike, see me doing that in this pic! All the best to your ride.
