I've traveled to Dubai many many times without incident.  My last name is German, and indistinguishable from a Jewish last name, especially to an amateur. I have never had a problem entering, in, or leaving Dubai. The UAE technically has a no admittance policy for people attempting to enter with a passport indicating past travel to Israel (a policy I strongly disagree with).   I am told by friends in the hospitality industry that even this rule is not being strictly enforced.
