Good for you in planning ahead. Large family gatherings can become overwhelming. Planning an Easter menu in advance will make it easier for you to create a delcisious easter meal that everyone will love. I recommend: Spicy Peach Glazed Ham: http://greatgrub.com/recipes/spicy_peach_glazed_baked_ham Roast Potatoes: http://greatgrub.com/recipes/mums_roast_potatoes Asparagus: http://greatgrub.com/recipes/simple_asparagus and a good seasonal salad: http://greatgrub.com/stories/anatomy_of_a_salad The ham is easy to prep and then spends 3 + hours in the oven. This leaves you plenty of time to spend with family and prepare the rest of the meal. The roast potatoes can cook while cook the ham cools. Asparagus is usually in season for Easter and is as easy to cook as boiling water. No need to get fancy here to impress the family. A little bit of butter and a sprinkle of salt will impress the most finicky guests with your vegetable savvy. Carve the ham at the table if you want to show off. Or if you are less confident of your knife skills, slice the ham and serve the slices presented on a platter. Good luck and enjoy!

Easter in my house is usually a ham. We have ravioli as a first course and then the ham. Ham is pretty easy since all you have to do is re heat one of those spiral cut glazed hams. I use the glaze that comes with the ham. My ravioli I get fresh made from the local Italian Deli but I make my own sauce. Usually a light meatless red sauce with fresh basil. You don't want a heave pasta sauce when you are also going to have a ham and side dishes. I would love to make a huge leg of lamb but I have people in my family who are not crazy about lamb. What are you making Al Dente?

to me, what says easter is a bone in ham, with mashed potatoes and gravy. (I don't waste money on the fancier hams - the cheap bone ins taste the best to me, and I make bean soup or baked beans with the bone later on.) I just bake it according to the timetable on the package, and if I'm feeling like it, I baste it with a mixture of ketchup, yellow mustard, and brown sugar about an hour before it's done.

If you think about it Easter is probably the easiest Holiday meal to get together. At least I think so.
