How do you skin and cook a catfish?

How to cook chicken soup? whole chicken with skin in water -- too much fatty because of the skin?

  • Should I cook with whole chicken with skin.. for short time, then dump the water (too fatty because of skin) and add fresh water again? or let it cook till serve....

    Cook it until the chicken falls off the bone. Remove everything from the broth let it cool a bit and skim all the fat off. Return the vegetables, and chopped chicken back to the both and reheat.
