How to cook chicken soup? whole chicken with skin in water -- too much fatty because of the skin?

Should I cook with whole chicken with skin.. for short time, then dump the water (too fatty because of skin) and add fresh water again? or let it cook till serve....

Answer:
Cook it until the chicken falls off the bone. Remove everything from the broth let it cool a bit and skim all the fat off. Return the vegetables, and chopped chicken back to the both and reheat.
