WANTED: your finest banana bread recipe that doesn't require eggs. BONUS: the bread travels well in the US mail. TRIPLE WORD SCORE: the recipe requires yogurt. I would like to send some excellent banana bread to a faraway dear friend who is going through some rough times. Trouble is, I can't use eggs. I'm (sort of) housesitting until Sunday, and don't want to buy a whole dozen eggs only to use two for baking and leave 10 behind. Also, it would be great if this recipe used yogurt, because there is a ton of it laying around these parts, getting more yogurty by the day. Also also, this bread should be able to withstand 2000 miles of overnight travel via USPS or UPS without turning into a crummy crumb pile. Thanks everyone!

As for shipping, make sure to wrap the bread in several overlapping layers of plastic wrap after the bread has been cooled down, and pad the shipping box. It should survive the journey.

Adapted from my mother's recipe. Pretty much a fail-safe crowd-pleaser every time. 1 C mashed bananas (2 or 3) 1/2 C vanilla yogurt 1 C sugar 1/4 C applesauce 1 tsp vanilla 1/2 C softened butter -------------------- 1 1/2 C flour 1 tsp baking soda 1 tsp spices (cinnamon, nutmeg, cloves, cardamom, your pick) Heat oven to 350 F. Mix first 5 ingredients well. Throw in dry ingredients, stir until blended. Pour into 1 9x5 greased loaf pan, or 2-3 small pans. For the larger pan, bake 50-60 mins, or until nicely brown & pulling from edges of pan. Do the toothpick test. For small pans, it takes about 35 mins.

oops... upon closer inspection it does use eggs. Rats. I suppose you could buy a half-dozen eggs and make three loaves?

I make http://www.meghanconrad.com/blog/2009/08/vegan-banana-muffins/, and have used the recipe to make bread, as well--just watch the bake time, and when it tests clean, it's done. The recipe gives you a really moist, slightly dense bread. Totally delicious. If you want to use yoghurt, you can substitute it for all of the applesauce and half of the oil that's called for. Muffins hold together ok in my kid's lunch, so I'm assuming that if you wrapped it well and packed it carefully, bread would be just fine sent through the mail.

Vegan Banana Bread. No eggs, but no yogurt either. Still, pretty damn good, IMHO. From The Compassionate Cook: 1/3 cup margarine 1/2 cup sugar 2 cups unbleached all-purpose flour 1 1/2 tsp baking powder 1/2 tsp baking soda 2 ripe bananas, mashed 1/2 cup soy milk (you could possibly substitute--or add--some runny yogurt here) 1 tsp vanilla extract 1/c cup chopped walnuts (optional) Blend all together & bake in an oiled 8 1/2 x 4 1/2 inch bread pan at 350 for 50 min (20-25 min if you make muffins; put into 3-inch muffin cups. I think they would ship better).

You can substitute 1 Tbsp flax meal + 3 Tbsp water for 1 egg. (Of course, if you don't want to buy a dozen eggs, you may not want to buy flax meal either.)
