Injera is bread made from fermented teff; why can't teff be used to make beer?

    It can. Just as sorghum, buckwheat & other grains are used in various concoctions & gluten-free products, any grain could theoretically be used & in many cultures, alternative grains are used to produce beer or beer-like beverages. In the US, teff is not a familiar grain, but with such a growing interest in homebrewing, supplies for doing this yourself are pretty readily available! Give it whirl!

Teff is sometimes classified as "Millet" http://en.wikipedia.org/wiki/Millet  This may help in your search for brewing with Teff.  Sprecher Brewing Co has a limited release millet beer called Shakparo http://www.sprecherbrewery.com/beer.php?cat=5 (seen halfway down the page here).  I have a question into Anne Sprecher as to what millet they used and if teff was involved, which I will get back to you about.  Are you looking specifically for Teff or would millet do?

Teff can potentially replace barely or wheat as a gluten free grain. The chemical composition of Teff is quite comparable to that of the above grains and sometimes exceeds in certain qualities such as starch and some of the essential aminoacids. Could someone share their experience with Teff as a full grain or or as an adjunct for brewing an ale/lager beer.
