As mentioned in other answers, Facebook itself doesn't have this option, but people have written extensions that block it. I found this on hacker news recently, https://chrome.google.com/webstore/detail/facebook-chat-privacy/gfpgaanechfneiboempkfjghninbibjn. Haven't used it myself, so I can't say if it works or not. Found both types of reviews there.

Well, their isn't any way from Facebook to do so. But its annoying sometimes when you don't want to reply to the person. But there are many extension available for browsers like Firefox, Chrome and Internet Explorer to disable the seen receipts from Facebook chat. FB unseen is not working for some users. For that purpose, I have got better solution. I have recently written a post about http://thetecnica.com/2013/01/turn-off-facebook-chat-seen-feature . Go through it and you will get the solution for sure.

Facebook seem to have overhauled their receipt-system quite recently, so it might be time to either remove and re-ask this question, or to just update the question in the description and await a more current answer. What's known right now is that there are 4 different "statuses": sending (still on the senders client), sending (it's reached the servers), delivered (it's arrived to the recipients device; there might be a notification etc), and read (opened by the recipient). What makes things more difficult, however, is that many of these are affected by things like privacy settings. If a conversation is archived, or if one of the users are blocked by the other, these notifications might be entirely removed, or it becomes sent (or possibly delivered). And if a user presses "Mark as unread," the status seems to revert to delivered even if it has been read. Additionally, I can deduce from my conversations on both the browser version and the phone app that having chat "Turned off" causes all sort of ambiguity; I can see some receipts on the phone, but hardly any on the browser. Some messages that I know have been read are marked as delivered - and these are in both conversations that can still be considered to be active, but also in conversations that ought to be "over."

You can't disable or hide it just like Whatsapp does but what you can do is, try to read the messages being offline. Install opera mini browser, login to facebook > open the messages folder > let them load completely > now turn off the wifi or mobile data > now tap on the message you can read it > Uninstall the Opera mini browser > Turn on Wifi or Mobile data.
