Well I don't think there is a specific programme in N America that can aid you with extended essay explicitly; however, there is a summer programme at Stanford U that generally incorporates IB sciences and humanities (if my memory doesn't trick me). You can find the topics that you want to explore for your extended essay and I think the teachers there will definitely be willing to help you and guide you through the process. Remember, your supervisor can also provide you with a lot of information if you are in good connection with him/her. Take a look on Stanford website for that programme (not sure if it is offered this year).Or, if not limited to N America and you are doing a biology or geography one, you will definitely be interested in working with http://opwall.com, an organisation (or some sort) that runs conservation research through academic partnerships, where you are able to work with uni level students and professors to aid your extended essay in areas such as Sulawasi, Indonesia - an island where extensive biodiversity is found. This is probably out of topic already, but anyway hope it helps :D
