    Funny you should ask. Some time ago, I had plans to start a vegan "ice cream" business. Legally in the U.S., if it doesn't have cream in it, it's not ice cream. It might be ice milk, but if it's vegan, it's a frozen dessert or frozen confection. But to respond to the intent of the question, the answer is "in much the same way as non-vegan ice cream". You'll need something that will freeze smoothly. Lots of things fulfill this requirement. Coconut milk, nutmilks (almond or cashew), oatmilk, rice milk...the more solid and fatty the base (up to a point), the creamier your result will be. The simplest version for most people starts with canned coconut milk, sweetened slightly beyond what's pleasant at room temperature. Put that in your ice cream freezing apparatus, whatever that might be. () Don't store it for very long, as it'll get icy.

After some experimentation (thank to Kat Tanaka Okopnik's suggestions) here is the result - a delicious, smooth and creamy vegan ice cream that is healthy and tastes better than conventional ice cream. CHOCOLATE VELVET ICE CREAM Serves 4-6 3 cups soy milk 2 cups non-dairy milk powder (I used a combination of rice, almond and coconut) 2 Tbl coconut flour ¼ cup agave nectar or sweetener of choice 2 Tbl vanilla extract 3 cups coconut oil (in liquid form) 4 Tbl orange juice In a blender or food processor, combine the soy milk, non dairy milk powder, coconut flour, agave nectar or other sweetened, and vanilla. Mix the ingredients for 2 minutes. As the machine blends, slowly add the oil and orange juice, alternating between the two until all parts are incorporated. Pour into suitable container and freeze. Enjoy often!

it's really not hard at all if you just buy a home ice cream maker. they are simple to use, and all you have to do is put the ice cream bucket in the freezer the night before.   when it is time to make ice cream, take the bucket out of the freezer, drop it into the ice cream maker, add your ingredients (including almond or coconut milk instead of cow's milk) based on whatever recipe you can find online or from the manufacturer, turn on the machine for 60 minutes, and you've got ice cream.
