Yes you can create different pricing models for various items through apple's In-App Purchases. When you submit your IAPs you can include multiples of the same item at different pricing and then change them out as you wish. You see this mostly from major publishers.An example would be selling a pack of 500 coins for .99 an then having a 2nd identical 500 coin pack included in your submission that's priced at a different rate but is not made active in that particular binary but can be recalled for future updates.
