If it totally dies back, yes go ahead and cut the stem, continue to water, but no fertilizer for two weeks after flowering, then resume, weak fertilizer every watering, by weak, I mean 1/4 strength. I have six orchids in bloom right now and love it.

This may seem space age but we don't usually recommend that you cut the flower spike after all the blossoms are gone. The reason is the same flower spike may produce another node or spike from the same stem. If you decide to cut the flower stem, on phalaenopsis orchid I suggest to cut right above the first "node" down from the tip of the orchid stem. Another flower spike will grow from this node with proper lighting.. good luck!
