How many restaurants really clean their dishes and silverware the proper way, do they disinfect dishes and silverware like they should this makes me wonder , does this make anyone else feel the same?

I've worked at a restaurant for quite some time now, and ive never seen anything wrong wiht the say they wash dishes. I mean, everything has to go in sanitizer water, and then through the dish machine, which can't exactly mess anything up as far as I'm aware. The only problem, is it doesnt dry dishes, and a dish person obviously isn't going to stand around and dry all the silverware and plates. So sometimes the silverware has watermarks on it, but I think those are pretty evident that theyre not just dirty.
