How do I cook chicken for soup?

  • I have 3 large boneless skinless chicken breasts that I want to use in chicken & rice soup. Do I just bake it?

    I usually brown (not fully cook) my soup meat in a skillet then use chicken stock or broth to de-glaze the pan. While that is browning prepare a pot with chicken broth or stock, 1 medium onion chopped, 1 clove garlic minced, three ribs celery thinly sliced. When vegetables are tender add raw rice. Let boil for 5 minutes. Reduce to simmer add partially cooked chicken and pan drippings and cook until chicken is done through and rice is tender but not mushy. Salt and pepper to taste.

I wouldn't bake it... that will make the outside tough and chewy. Best to poach it either in the soup or in some kind of poaching liquid. Poaching in the soup stock would be best, will give your soup extra flavor and a little more body.

Boil it with the bone in, save water. take chicken out debone and veggies to water bring back to boil add chicken and noodles if you want i use home made noodles so yummie i may make some this weekend thanks
