Why won't my app run in the IOS simulator?

Im getting the new Ipod Touch with IOS 5 and I'm thinking about jailbraking it, but I have a question?

First off I would like to know if I do the tethered jailbrake, once I download lets say an app, and then, the jailbrake is not there anymore after some time (since the tethered in temporary) will the app still work? All I want is the whatsapp, because free apps I mean I'm sure I can purchase them, but I've seen that the whatsapp Apple has taken it out and I won't be able to run or download it if the ipod is not jailbroken. Also, if any of you can recommend any videos that really help out on the jailbrake that would be great. Thanks

im not sure whether the apps will still work, but in regrds to whatsapp, since it requires a mobile number, it isn't available for ipod. It is still there for iphone though.
