The average annual wages, before tips, is $20,000 to $21,000. With tips added to the base wage, average earnings jump to $46,000 per year. An estimated 75% of servers are women. Whether you work in a bar, fine restaurant, cafe, or greasy spoon, your job is first and foremost a sales job. The more you sell, the better your tips will be. It is customary in the U.S. to tip 15%-20% of the bill, before any taxes. As with other types of sales, a good waitress will improve her take-home pay by improving her skills. Some people think that waiting tables is easy. They are mistaken – isn’t it. It takes far more than a winning smile or pleasant manners to do the job well. 5 Essential Waitressing Skills 1. People Skills Hone your people skills and learn how to deal with difficult customers. Assess your customers as soon as they walk in the door. Even if you are rushed off your feet, try to greet customers promptly. At the very least, bring them the menu and take drink orders. This will buy you some extra time to serve your other tables, until you are able to get back to take the order. Customers will feel acknowledged and welcome. Pay attention to the customer’s needs and anticipate those needs. Get along with your co-workers to the extent possible. Go the extra mile for another waitress who is struggling with a large table or section. She will do the same for you one day. The same goes for the cooks, bus people and bar staff. 2. Appearance It goes without saying you need to be well-groomed. If you are sloppy, your customer will assume the establishment is sloppy or even less than clean. Wear sensible shoes. You will be on your feet for most of your shift – it is hard to smile when your feet are killing you. Estimates are that busy serving staff walk 10-24 miles each 8 hour shift. 3. Efficiency Save yourself some steps. At the beginning of your shift, or when not busy, check your empty tables to make sure they are clean and properly set. Once a customer has placed an order, bring any condiments he/she may need the next time you are passing by the table. Your customer will appreciate not having to try to flag you down from across a crowded room to ask for something while the food gets cold. If you are lucky enough to have a bus boy or girl, give him/her a percentage of your tip to do these things for you. 4. Educate Yourself If there is a SafeServe course available in your state – take it. The course can be taken on-line or in a classroom and cost about $40.00. Many employers will require it at the time of hire. Also, having the credential may help protect you from potential liability for over serving alcohol. It may seem obvious, but learn how to carry multiple plates at once and how to load and balance a heavy tray. 5. Know the Menu Make sure you know the menu and the most popular items on it. If your establishment is licensed know the wine list and what goes with what. Customers will often ask your advice. Find out what the special is today so that you can recommend it. Know what the kitchen is out of today rather than let people order and be disappointed and, receive their food later than their companions. It is up to the customer whether to and how much to tip. The more you do to anticipate your customers’ needs the better your tips will be. Good luck!
