What determine what food taste like ( tuna, meat, chocolate and so on)?

  • I know that the taste of food depend on each individual but i don't really know what makes the food taste like they do, What make tuna taste like tuna... what makes chocolate taste like chocolate is there something in the foods genetic make up that alter its taste? Guess so because if no chocolate would taste like tuna then...

So even though tuna and salmon are both fish, they each have a unique combination of esters, creating a distinct flavor for each one. Furthermore, esters are altered with heat or refrigeration--which is why cooking and serving temperature makes such a difference in flavor.
