Sometimes we use the definite article and sometimes we don't. English might say it one way and Americans the other. For example English always say "in hospital" and Americans say "in the hospital". I would have done that sentence this way: This is because hideout places for animals decrease due to temperature differences between day and night.

Both are incorrect. First sentence: 'decrease' should be 'decreases' and 'the day and night' should be 'day and night.' Second sentence: 'decrease' should be 'decreases'.

As they stand both are acceptable. It is more a question of style. Decreases would sound better in both sentences rather than decrease.
