How to make working butterfly wings?

How do restaurants make spicy fried wings?

• I want to make crispy and spicy chicken wings like at restaurants but when I try to season them ahead of time the spice washes off in the oil and when I try the method where you mix them in the spicy sauce after like at pizza hut and stuff they lose the crispiness. Anybody know how to keep the flavour in the wings? And I mean without resorting to baking them.

  4 1/2 pounds chicken wings 2 Cups whole wheat flour 1 Cup all purpose flour 2 1/2 teaspoons salt 1 teaspoon Paprika 1 teaspoon cayene, add more to taste Hooters Hot Sauce Mix (see below the recipe) Coat the chicken in the entire mixture except for the hot sauce and refrigerate for 1 1/2 to 2 hours. When ready to fry, heat the oil to 375 and add chicken wings but don't overcrowd. Fry until golden brown, remove and dry with paper towel. When all the wings are done, put them in a large bowl and toss them with the hot sauce mixture. You then have to serve immeditely (so you don't lose the crispiness). Hot sauce mix: 3 sticks unsalted butter, melted 1/2 Cup Tabasco + 2 Tbs Tabasco 3 Tbs Brown Sugar 3/4 tsp Paprika 3/4 tsp Salt 1 Tbs Balsamic Vinegar 3/8 tsp Cayene 2 Tbs Chili Sauce Mix all ingredients together.
