What's a flat texture with depth called? (textures in games)?

This is about object models in games; I wanted to know more about a method where they use a texture on a flat object to make it look more in-depth... I can remember an example picture where they shown an orange. As you know oranges have skins (doh...), anyways this skin has little holes and dents. Instead of a smooth sphere they added a (flat!) texture to the model which made the holes and dents look more realistic. I remember there was a specific term used for this method, anyone know? :s
