What appetizers and goodies should I make for my book club?

It's a women's book club in the evening. The hostess is providing the drinks and the house, I'm just providing the food. I have about 4 hours total to make and/or chill food after going to the store to buy ingredients. I want some awesome tasting stuff that's fun to eat, but not something that's super time consuming to make. Some of the ladies are on diets and eat only healthy food, most will eat nearly anything, so I need a variety.

Make tuna salad (using low fat mayonnaise, yogurt, and spices) serve it with rolls, bagel chips, and varying types of crackers. Hummus is great, served with pita chips, pita bread, and veggies sticks. Fruits with a honey yogurt dip. Bread bowl of low fat ranch dip, served with different chips, crackers, pretzels, and veggies. If you have time, you could do a crock pot of meatballs and serve it with toothpicks (so people can just have the meatball) and rolls (so people can have a sandwich) Deli platters of meats, cheeses, spreads, tomato, lettuce, olives, grapes, etc., always work because people can have a sandwich or make a wrap, or they can just pick.

That's a lot of work! In the book club I belong to we each bring a dish (potluck). That way there's no pressure. Our group seems to divide up as to what each one brings. Typically there's a pasta salad, egg salad sandwiches, a green salad, finger foods (like salami, cheese, crackers, olives, salsa, tortilla chips), and a dessert. One of the things I enjoy doing is trying to coordinate the food with the book. For example, our group recently read "Cleopatra" by Stacy Schiff so I created a pastry filled with dates and honey http://bestmixerreviews.com/date-filled-pastries/ . With your limited time this probably isn't practical right now. Brownies are quick to make and always seem to be a big hit. Making cookies can be quick as well. If you continue to be the one to bring all the food think about trying to do some of the work the night before so you're not so rushed.

I took a big platter, and filled it with all kinds of different goodies, like small pickles, olives, salami, and a variety of cheeses and crackers, then I added celery, carrots, cherry tomatoes and ranch dip. It was a big hit with all the women, because they could pick and choose what they wanted, There are really good recipes for low fat cupcakes that would be easy to take as well.

You should do a few sandwiches with plain fillings, a salad, quiche, and a few light nibbles such a mini sausages, nuts, crisps. Have a fruit cake as well will always go down a treat!
