How to cook lima beans with fat back?

  • Okay so I am wanting to make lima beans with fat back. I bought a frozen bag of lima beans and some fat back. How long do I cook the lima beans? And how many slices of the fat back do I place in the pot of lima beans? The fat back came in strips. I know I cover the limas with water and bring to a boil...I just need to know how long I cook after that and how many stirps of the fat back I put in the pot. Thanks!

    Cut 6 - 8 slices of the pork into 1-inch pieces and cook it on low heat, in the pot you plan to use for the beans, until the meaty part is crisp. Leave the meat and all the drippings in the pot. Add the beans, add enough cold water to cover them plus 1 inch. Add 1/2 cup diced onion, 1 clove of garlic minced fine, pepper, and salt (not too much -- the pork is already salty), and cook over medium heat. Frozen beans usually have cooking times on the package, but if you want them to taste like the ones Mama used to make, let them cook for 45 - 60 minutes. You'll lose some nutrients but gain some flavor. Keep an eye on the beans; don't add too much water, but make sure there's enough to cover the beans.

i havent ever tried frozen beans but i would cube 2 or 3 cups of fat and pre boil it till soft then add the beans
