Why is guitar sheet music never arranged but piano music is?

Whenever I buy sheet music for the piano, I have a hard time finding the original (like what the musician actually plays in the background). If I want to play that, I have to listen to the song and play the background piano music by ear. And when I go to the store, all I can ever find are piano pieces that are arranged so that you play the melody that the singer sings. My question is, why is the guitar music at the store always the background music WITHOUT the melody included, but piano music seems to be the opposite?

You should be looking for Piano accompaniment, not piano solo.
