Are you supposed to eat the Fondant Icing?

I love decorating cakes and have recently learned how to use Fondant Icing to make them look especially professional. My question though is, the fondant does not taste all that great, are we supposed to eat it? Also I noticed that this is the icing used on wedding cakes, but when the cake is served, the fondant is gone. Do they just take it off? If so, how? Please help. I want cakes that taste as good as they look. Thanks.

Answer:
first you ice the cake with buttercream icing and then put the fondant over top. when getting ready to cut the cake, you peel the fondat off and eat the buttercream.. The buttercream on the bottom had to be extremely smooth or the fondant will show the unevenness of the frosting.
