Need information in being a student or signing into a program in Australia?

• A year ago I went to Sydney, Australia on a work holiday visa. I can't go on a 2nd yr visa since I didn't work in fruit picking and that is a requirement. I would like to go back to Sydney as a student or maybe into a program. What are the requirements? Ive read that I need a refferal letter so how would I get that? Any programs or study abroud that you can recommend? I was enrolled in school before I left and haven't enrolled since I would like more options. Any advice please let me know. Thank you (:
