There is absolutely no way to make a 2.0 profile private. The "private" profiles that you have seen are still in 1.0. You can make specific things on your profile private to only you or only your friends, such as modules (comments, activities, about, etc), your last login, and photos. Your entire profile and default photo will still be available for everyone to view, but you can make certain things on your profile private. Just not the entire thing.
