In my stealth settings, the option of appear offline to a particular person is grayed out.. I cannot use it.?

I can only use the appear online & permanently appear offline option. Why is the 2nd option not usable? If I choose appear permanently offline, can I change it to appear online again?

The person is on your contacts. Remove him from your contacts and you can do what you want.
