Sending emails and finding email addresses to insert?

WHEN I DOUBLE CLICK ON THE "TO" HOW DO I VIEW ALL MY EMAIL ADDRESSES. THERE IS ONLY A SMALL BOX WITH ABOUT 15 ADDRESSES IN IT.
