Why do some random emails have the phrase, "I am using my friend's email to write this"?

Answer:
Its just another way to get people to open mail from addresses they do not recognize. It plays on the fact that supposedly you would recognize their e-mail otherwise. Just a way to convince people that the message is from someone they know.
