my partner lives in Australia and just applied for a working visa ( tier 5) was wondering if she can enter the UK on a one way ticket or would she have to get a return?

You don't need a return flight ticket as a Tier 5 visa holder under the Youth Mobility Scheme since you may stay for up to two years.
